Chocolate Pineapple Lump Pudding

Ingredients

1 cup cashew nuts
1/2 cup soft dates (or soaked)
2 avocados
coconut water, as needed
cacao
1/2 cup dried pineapple, chopped

Directions

1 Blend all but the dried pineapple until delicious and creamy.

2 Add the chopped dried pineapple.

3 Leave refrigerated for at least 3 hours.

Chocolate Chip Blondies

Ingredients

  • 1 1/2 cups chickpeas or white beans (1 can, drained and rinsed) (250g after draining)
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • level 1/4 tsp salt
  • 3/4 cup brown sugar or coconut sugar
  • 2 tsp vanilla extract
  • 1/4 cup ground flax or quick oats (20g)
  • 2 tbsp nut butter
  • 2 tbsp applesauce
  • optional: 1/2 cup chocolate chips

Directions

Preheat oven to 350 degrees. Blend all ingredients (except chips) until very smooth in a food processor (not a blender). Mix in chips, and scoop into a greased (or tinfoil-lined) 8×8 pan. Optional: for “prettiness” you can stick some chocolate chips on top of the batter as well. Bake for around 30 minutes. They’ll look a little undercooked when you take them out, but they firm up as they cool, and you don’t want them to get hard.

Ingredients

  • 1/4 c. canola oil (or oil of your choice)
  • 1/4 c. almonds
  • 1/3 c. water
  • 1/4 c. chickpeas, drained and rinsed
  • 1/4 c. nutritional yeast
  • 2 1/2 T. lemon juice
  • 1 t. minced garlic
  • 1/4 t. salt
  • 3/4 t. curry powder
  • 1/2 t. dried oregano
  • 1/2 t. dried cilantro

Instructions

  • Note: this recipe could easily be doubled and leftovers will keep covered in the fridge for 7-10 days
  • In a high speed blender or food processor, combine oil, almonds, water and chickpeas. Blend until relatively smooth.
  • Add remaining ingredients and blend until smooth.
  • Transfer to a small bowl and refrigerate until serving.

Creamy Cashew Pudding

  • 1 cup raw cashews, soaked*
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut oil
  • 2 teaspoons raw honey
  • ¼ cup filtered water, or almond milk
  • pinch of sea salt
 Instructions
  1. Combine all of the ingredients in a blender or food processor, and blend until very smooth and creamy.
  2. Be sure to taste the results and adjust the sweetness, if necessary, then transfer to the fridge (or freezer, if you’re impatient!) to chill before serving.
  3. Serve chilled and enjoy!
  
Notes
*To soak cashews: Soak 1 cup raw cashews in 2 cups of filtered water, so that they are completely covered in liquid. Lightly cover the bowl with a towel, and allow to sit at room temperature for 2-3 hours. Drain completely and rinse the cashews well before using. (Keep refrigerated if not using them right away.)

1 banana (I use a frozen one, but you don’t have to)
1-2 tablespoons walnuts (optional)
1 cup milk of choice
1 cup flake cereal, such as Arrowhead Mills’ spelt flakes (You can use a gluten-free cereal)
1 teaspoon pure vanilla extract

Directions

Put all the ingredients into a blender, and blend. Now eat! This gets thicker, the longer it sits.

Oh, and cinnamon or chocolate chips make nice additions. But then again, chocolate chips make a nice addition to anything!

Raw Almond Butter Fudge Pudding

Ingredients

2 Tablespoons raw almond butter
2 Tablespoons almond milk
1 teaspoon cocoa powder
1/4 teaspoon vanilla
pinch of salt
liquid stevia, to taste (I used about 5 drops)
1 teaspoon coconut oil (optional, but it helps it thicken up!)

Directions:

Combine all of the ingredients in a small bowl, and stir by hand until smooth and creamy. Adjust the liquid stevia, to taste, then place the bowl in the freezer for 15 minutes to set. It will thicken up when cold!
