4oz uncooked turkey sausage, removed from casing
1/2 medium uncooked onion, diced
1/4 tsp cumin seeds
1/4 tsp ground cinnamon
1/4 tsp dried coriander leaf
2 Tbsp raisins
1 cup fat-free chicken broth
1/2 cup uncooked couscous
1 Tbsp chopped unblanched almonds
1. In a nonstick saucepan, cook sausage over medium heat, breaking it up as it cooks.
2. Stir in onion, cumin, cinnamon and coriander; cook until onion has softened. Stir in raisins and chicken broth and bring to a simmer.
3. Stir in couscous, cover, remove from heat and let stand 5 minutes.
4. Fluff with a fork, sprinkle with almonds and serve. Yields about 3/4 cup servings
